Lentils with Cauliflower Steaks

Ingredients :(makes 2 servings)

1 small cauliflower head

1 cup cooked lentils (see the ingredients below)

¼ tsp salt

Pepper to taste

1 Tbsp parsley, chopped

2 Tbsp tamari sauce For the lentils:

¾ cup dry lentils, rinsed

1 medium shallot, minced

1 ½ cups water

2 garlic cloves, minced

2 Tbsp paprika

1 tsp date honey

1 tsp apple cider vinegar

Directions :

To prepare the lentils :

Heat 1 Tbsp water in a saucepan.

2.Add the shallot and garlic, and sauté until fragrant and soft.

3.Add the lentils, water, paprika, and 1 Tbsp tamari sauce. Bring all to a boil.

4.Reduce the heat, and let cook for 20–30 minutes until the lentils are soft.

5.Remove from heat and set aside, with the lid on, for 10 minutes.

6.Mix in the apple cider vinegar, the remaining tamari sauce, and the date honey.

To prepare the steak :

1.Preheat the oven to 450° Fahrenheit.

2.Line a baking tray with parchment paper.

3.Cut the cauliflower into small florets, and place them on the tray.

4.Season with salt and pepper, and bake them for 15 minutes on each side.

5.The steaks should be brown on the outside and soft on the inside. Serve with 1 cup cooked lentils.
