Ingredients (makes 1 serving)
1 cup green peas, sprouts
1 large cucumber, spiralized
3 stalks celery, chopped small
1 cup purple cabbage, chopped into small strips
1 cup fresh corn (optional)
1 red bell pepper, sliced
1 carrot, chopped Handful of cilantro, chopped
1 Tbsp pumpkin seeds For the dressing:
1 large ripe mango 3–5 leaves mint (optional) Handful fresh basil 1 clove garlic Fresh juice from 1 lime
Direction :
1. Cut and mix all the ingredients together in a large bowl.
2. In a blender, combine all the ingredients of the dressing and blend until smooth.
3. Pour the dressing over the salad, mix well, and serve!
