These layered bowls of wholesome goodness will knock your socks off, even as they’ll fill you up to the brim. Not for the faint-hearted, these are some big bowls. You could even decide to share them out between three if your appetites can’t handle this amount of food. Or you can turn it into a bit of an eating contest and show who is the boss, vegan style.

Ingredients :
1/2 green or red capsicum
1 small onion
2 tomatoes, chopped
1/2 head iceberg lettuce, chopped
1 carrot, grated
1 avocado, sliced or smooshed
Sprinkle of salt or Vegie Parmesan
1 box of chicken-style strips, thawed
1 cup uncooked brown rice
2 tablespoon water
1 tablespoon soy sauce
1 tablespoon barbeque sauce
Directions :
1.Chop up the Fry’s chicken-style strips into slightly smaller chunks, then put them in a bowl, together with the barbecue sauce, soy sauce, and water and mix it together well. Let the strips marinate for a while.
2.Follow the package instructions to cook the brown rice.
3.In the meantime, take a frying pan, put in a little oil, and cook both the capsicum and the onion (which should take about 3 minutes). When they are done set them aside.
4.Slice and dice your tomatoes and lettuce and grate your carrot. Set this to the side as well.
5.The fry Fry’s chicken-style strips plus the remaining marinade now go into the frying pan, where you cook them over a medium heat for about 5 minutes. (Microwaving them for 2-3 minutes also works).
6.When the rice is done drain out any remaining remaining water and mix in the capsicum and the onion.
7.Take your bowls, add a layer of the rice mixture, flatten it out, then add a layer of the Fry’s chicken-style strips. Create a third layer with the carrot, tomato, and lettuce. Top each bowl off with sliced or smooshed avocado. Add a sprinkle of salt, as well as a bit of vegan Parmesan. It is ready to be served.
