Ingredients : (makes 6 servings)
2 large potatoes, peeled and cubed
2 15-oz cans chickpeas, rinsed and drained
30 oz fresh tomatoes, diced
1 tsp ground cumin
1 tsp turmeric
1 tsp curry powder, preferably hot
1 onion, diced
2 cups homemade vegetable broth
2 garlic cloves, minced
1 Tbsp water
Salt and pepper to taste
Fresh coriander for garnish
Directions :
1.Sauté the onions with 1 Tbsp water until translucent.
2.Bring in the garlic, and cook for 1 minute more, until fragrant.
3.Mix in all the other ingredients, and bring to a boil.
4.Reduce the heat, and simmer for 20–25 minutes until the potatoes are cooked through.
5.Add salt and pepper to taste.
6.Serve with fresh cilantro on top.
